    Step 1

    排骨洗净斩小块 Chop ribs into small pieces

    Step 2

    用滚水汆烫去杂质备用。 blanch in boiling water.

    Step 3

    起油锅;用少许油爆香蒜姜和辣椒,倒入排骨翻 炒。 Heat oil in wok, sautéginger, garlic and red chili until fragrant, toss in ribs

    Step 4

    以大火把排骨快速翻炒至闻到香味为止。 Stir-fry ribs with high heat briskly until aromatic.

    Step 5

    加入盖过排骨的清水再下调味料,大火煮滚。盖上锅盖焖煮十分钟后,打开锅盖搅拌均匀,转小火再煮上1小时。焖至收汁为止,熄火盛盘享用。 Pour in water to cover the ribs, add in seasoning and bring to quick boil. Cover lid and simmer for 10 minutes; remove lid, turn to low heat and simmer for another 1 hour。Dish out to serve when gravy thicken.
