    Directions

    Step 1

    把马铃薯丝先泡在冷水中, Soak juliennes potatoes in cold water。

    Step 2

    冲洗去粉浆,捞出沥乾,放在盆内。加入太白粉和盐拌匀。 wash of the starch, drain and put in a basin.Toss with corn flour and salt.

    Step 3

    准备两个漏杓的碗,将其一漏杓碗涂油铺满马铃薯 丝,另一漏杓碗沾油后,覆压其上,轻轻放进油锅 内炸4-5分钟。 Prepare 2 metal siever, grease them with oil; spread juliennes potato on one of the siever, then top with another siever and press firmly; place the whole thing in hot oil and deep fry for 4-5 minutes.

    Step 4

    临起锅前改大火炸呈金黄色及酥脆捞出,沥油即 成“雀巢”。 Before dishing out, turn to high heat and continue deep fry until golden brown.

    Step 5

    将材料A拌匀腌约1⁄2小时,然后放入热油炸脆,捞出 沥油备用。 Combine all ingredients A and marinade for 30 minutes; and then deep fry in hot oil until crispy, drain.

    Step 6

    以2汤匙油爆香材料B的虾米、蒜蓉及大葱丁,盛起 备用。 Saute dried shrimp, garlic and onion with 2 tbsp oil until fragrant, dish out.

    Step 7

    把酱汁煮滚后,将炸脆的肉丁和材料B回锅翻炒均 匀,最后加入材料C兜匀,即可盛入雀巢中享用。 Bring sauce ingredients to boil; toss in fried meat and return ingredients A and B to wok, stir-fry until well mix; toss in ingredients C and pour over the potatoes bird nest to serve.
