韩式人参鸡 Ginseng Chicken

【材料】
菜园鸡1只、鲜或干人参1支、高丽参1条、大蒜2粒(连皮剥散)、青葱1棵(切片)、人参酒2汤匙、鸡高汤2公升
【填料】
糯米60克(浸泡2小时)、红枣6粒、栗子6粒
【调味料】
盐加胡椒粉适量、额外人参酒
【做法】
1. 把鸡洗净滴干。
2. 将填料全部混合,加少许椒盐调味,然后塞入鸡腹,封口。(图1)
3. 把鸡放入瓦煲里,倒入高汤,加入人参、高丽参及剩余的蒜头粒。(图2)
4. 加盖以小火炖煮1小时30分钟即可。
5. 吃时加椒盐调味,并加青葱和人参酒享用。

【Ingredients】
1 whole farm chicken, 1 fresh or dried ginseng, 1 Korean Red Ginseng, 2 whole garlic (split with skin intact), 1 stalk spring onion (sliced), 2 tbsp ginseng wine, 2 liter chicken stock
【Stuffing Ingredients】
60g glutinous rice (soaked 2 hours), 6 pcs red dates, 6 pcs chestnut
【Seasoning】
Some mixture of salt & pepper, extra ginseng wine
【Method】
1.Wash chicken and drain.
2.Combine all stuffing ingredients in a boil, season with some mixture of salt & pepper and stuff into chick-
en’s cavity, seal.(pic 1)
3.Place chicken into a clay pot, pour in stock, add in both ginseng and unused garlic.(pic 2)
4.Cover with lid and cook in low heat for 11⁄2 hour.
5.Season with mixture of salt & pepper as you wish, add spring onion slice and extra ginseng wine to enjoy.
