香烤鱼 IKAN BAKAR

材料
魔鬼鱼1片、羊角豆10条(切成片)、香蕉叶
辣椒糊
姜3寸、香茅5枝(切段)、红葱8颗(切大块)、虾米1汤匙、
红辣椒3条、辣椒酱3汤匙、亚参片2片、盐1茶匙、糖1茶匙、疯柑叶适量
蘸酱
亚叁膏2汤匙、峇拉煎1汤匙、红葱头2颗、红辣椒2条、指天椒5条、糖1汤匙、
水50毫升、红葱2颗(切小块)、番茄1个(切小块)、指天椒5条(切薄片)
做法
1.腌鱼:除了疯柑叶和亚叁片,将所有材料搅拌成糊状。将糊倒入锅中,加入柑叶和亚叁片一起炒
香5-6分钟。放一旁待凉备用。(图1-2)
2.蘸酱:除了番茄、2颗红葱头和5条指天椒之外,将所有材料搅拌混合。混合后倒入碗中,加入剩
余材料即可。这就是香烤鱼的蘸酱。(图3-6)
3.准备一大片香蕉叶,把魔鬼鱼放在上面,舀一大勺腌鱼酱汁铺在鱼身上,再放上羊角豆,然后包裹好。(图7-9)
4.准备一个不粘锅,放少许油,每面煎6-7分钟。(图10)

Banana leaf for wrapping
Paste Ingredients
3 inches Ginger, 5 pcs Lemongrass(cut into slices), 8pcs Red Onion(cut into big chunk),
1 tbsp Dried Shrimp, 3 pcs Red Chili, 3 tbsp Chili Boh,
2pcs Assam Keping, 1 tsp salt, 1 tsp Sugar, Some lime leaf
Dipping sauce ingredients
2 tbsp Asam Jawa Paste, 1 tbsp Belacan, 2pcs Red Onion, 2pcs Red Chili,
5pcs Chili padi, 1 tbsp Sugar, 50ml Water, 2pcs Red Onion(cut into small cubes),
1 pcs Tomato(cut into small cubes),5pcs Chili padi(cut into thinly slice)
Method
1.To prepare the fish marination paste: Blend everything except
lime leaf and assam keping. Pour the paste into a wok then
add in lime leaf and assam keping to cook till fragrant. It will
take about 5-6minutes only. Set aside to cool down.(Pic 1-2)
2.For the sauce: Blend all the ingredients except tomato, 2 red
onion and 5 chili padi. After blend, pour into a bowl and mix
in all the balance ingredient will do. This will be the dipping
sauce for Ikan Bakar.(Pic 3-6)
3.Prepare a large pieces of banana leaf and place the fish
on top, then scoop a big spoon of sauce over the fish then
topped with lady finger slices. Wrap up the fish to form it like
an envelope.(Pic 7-9)
4.Prepare a non-stick pan and pan fry each side for 6-7 minutes
with some oil.(Pic 10
