香脆虾菇卷Crispy Prawn And Mushroom Rolls

【材料】
去壳虾肉200克、蛋白1汤匙、红辣椒茸1茶匙、金针菇15克(弄散)、杏 鲍菇1朵(撕开)、茄子1条、云吞面条适量

【面糊】(混合)
面粉5汤匙、粟米粉5汤匙、小苏打粉1/2茶匙、发粉1茶匙、盐1/2茶匙、食 油1汤匙、鸡精粉1/2茶匙、胡椒粉1/2茶匙、清水10-12汤匙

【做法】
1.把虾肉剁烂后加少许盐、糖及胡椒粉调味,然后加入蛋白及辣椒茸,搅拌成有弹性的虾胶。(图1-2)
2.把茄子刨成长薄片,然后以纸巾吸干水。(图3)
3.把1片茄子铺在桌面,然后铺上1茶匙虾胶,再叠上2条金针菇和1片杏鲍菇,再把茄子卷起,并以3条云吞面条绑紧。(图7)
4.把虾菇卷沾面糊,放入热油中炸至金黄色即可。(图8)

【Ingredients】
200g shelled prawns, 1 tbsp egg white, 1 tsp chopped red chillim, 15g enokitake mushrooms(separate the stalks), 1 piece eryngii mushroom(tear into shreds), 1 long brinjal, 1 bundle fresh wanton noodle strands

【Batter】(Mix well together)
5 tbsp plain flour, 5 tbsp cornflour, 1/2 tsp bicarbonate of soda, 1 tsp baking powder,1/2 tsp salt, 1 tbsp oil, 1/2 tsp chicken stock granules, 1/2 tsp pepper, 10 – 12 tbsp water or enough to make batter

【Method】
1.Mince prawns and add a little salt, sugar and pepper. Stir in egg white and chilli to mix until sticky.(pic 1-2)
2.Use a vegetable slicer to cut brinjal into long thin strips. Place strips on kitchen paper to absorb moisture.(pic 3)
3.Place a strip of brinjal on a tabletop. Spread a teaspoon of minced prawn, top with 2 pieces enokitake mushroom and 1 piece eryngii mushroom. Wrap into a roll. Use 3 strands of wanton noodle to secure the mushroom roll.(pic 4-7)
4.Dip the rolls in batter and deep-fry until crispy and golden.Serve immediately. (pic 8)
