香蒜酱烤鸡 Pesto Chicken

【材料】
全鸡1只(约1.8公斤,洗净抹干)
【腌料】
蒜头1瓣(剁碎)、盐1茶匙、黑胡椒粉1茶匙、芥末1汤匙、糖1茶匙
【皮下腌料】
火腿50克(剁碎)、牛油100克
【香蒜酱材料】
九层塔叶和花生各80克、油50-60毫升、盐1茶匙
【做法】
1. 用腌料腌鸡的内腹,剩余的腌料可腌外部。(图1)
2. 把火腿和牛油混合,然后以手指把它塞到鸡胸部皮下。(图2-3)
3. 把蒜香酱材料放入电动搅拌器搅拌至细,然后收入冰箱待用。(图4-5)
4. 把蒜香酱涂满整只鸡,然后放入预热至190C的烤炉里烤55-65分钟。(图6-8)
5. 取出烤鸡待凉10分钟后才斩件吃。

【Ingredients】
1.8kg bird (washed & wiped dry)
【Marinade in the cavity】
2 cloves garlic(chopped), 1 heaped tsp salt, 1 tsp black pepper(ground), 1 tbsp mustard, 1 tsp sugar
【Marinade under the skin】
50 g bacon(chopped), 100 g butter
【Nuts Pesto Covering】
80 g basil leaves, 80 g peanuts, 50-60 ml oil, 1 tsp salt or to taste
【Method】
1. Rub chicken cavity with marinating ingredients, and if there is extra just wipe it over the chicken. (pic 1)
2. Combine the chopped bacon & butter, using your fingers slowly run under the chicken skin from the breast part, slowly push the bacon butter under both sides of the chicken breast meat skin. (pic 2-3)
3. Blend all basil pesto ingredients in a processor. Refrigerate until required. (pic 4-5)
4. Rub the pesto all over the chicken then preheat oven at 190℃. Place basil pesto chicken on an oven proof tray and bake for 55-65 minutes. (pic 6-8)
5. Remove chicken from the oven and leave to stand for 10 minutes before carving it to serve.
