    小贴士 : 虾不要先炸也行,从做法(1)直接到做法(3)。

    Step 1

    把虾处理妥当,洗净抹干,然后以盐和胡椒粉腌过。Trim prawns neatly. Rinse and pat dry. Add a sprinkling of salt and pepper.

    Step 2

    热油把虾炸至七成熟并变色为止,盛出置放一旁。Deep-fry the prawns in hot oil until three-quarters cooked and change colour. Dish out and leave aside.

    Step 3

    起锅热牛油并加入少许油,把材料B爆香,然后加入菜脯、疯柑叶及青葱,继续炒至香。Melt butter in a preheated wok. Add oil then fry ingredients B unti fragrant. Add in choy poh, kaffir lime leaves and spring onion and continue to fry until aromatic.

    Step 4

    加入调味料和虾,大火炒3-4分钟至均匀,盛出趁热吃。Put in seasoning and return the pre-fried prawns to the wok, toss and stir unti well combined over high heat for 3-4 minutes. Dish out and serve immediateIy.
