麦黄金菇 Deep-Fried Oatmeal Mushrooms

【材料】
鲍鱼菇150克、老人麦2汤匙

【奶油酱】
马芝林菜油2汤匙、食油1汤匙、蛋黄2粒(打散)、咖喱叶2束、指天椒茸2汤匙、辣椒干4条(切段)

【调味料】
白糖3/4汤匙、盐1/4茶匙、胡椒粉1/2茶匙、鸡精粉3/4茶匙

【面糊】
粘米粉40克、栗粉15克、蛋黄粉20克、自发面粉100克、清水250毫升或适量

【做法】
1.把鲍鱼菇撕成条。把面糊材料混合,然后用来沾鲍鱼菇条,炸至金黄色后放在纸巾上吸干油。
2.起锅热菜油和食油,放入咖喱叶、指天椒、辣椒干和调味料,炒至香。
3.转慢火,慢慢倒入蛋黄,以筷子搅拌成丝状。
4.加入麦片和炸鲍鱼菇,拌均后即盛出。

【小贴士】
炸过的鲍鱼菇不沾奶油蛋黄丝也一样可口。

【Ingredients】
150g abalone mushrooms, 3tbsp quaker oats

【Butter Sauce】
2tbsp margarine, 1tbsp oil, 2 egg yolks(beaten), 2 sprigs curry leaves, 2tbsp chopped chili padi, 4dried chilies(cut into 2cm lengths)

【Seasoning】
3/4tbsp sugar, 1/4tsp salt, 1/2tsp pepper, 3/4tsp chicken stock granules

【Batter】
40g rice flour, 15g cornflour, 20g custard powder, 100g self-raising flour, 250ml water or just enough water to mix

【Method】
1.Tear mushrooms into strips. Combine batter ingredients with just enough water to mix. Dip the torn mushroom pieces into the batter and deep-fry in hot oil until golden and crispy. Remove and place on absorbent kitchen papers.
2.Heat a clean wok with margarine and oil the put in curry leaves, chili padi, dried chilies and seasoning. Stir-ry until aromatic.
3.Reduce the heat and gradually pour in beaten egg yolks. Stir briskly with a pair of chopsticks until egg yolk shreds are formed.
4.Add in oats and put in pre-fried mushrooms to mix.Dish out.
