黄金车轮鸡 Golden Chicken Rolls

【材料】
鸡全腿(去骨)2只、熟咸蛋黄4粒(压碎)、橙色面包糠1小碗、鸡蛋1粒(打散)、粟粉3汤匙、锡箔纸2张、保鲜膜2张
【做法】
1. 鸡腿摊开有筋部位用刀轻斩数下,使筋断以防蒸时变形,并均匀的撒些盐和胡椒粉调味。(图1)
2. 将咸蛋黄铺在鸡腿,然后卷起来,用保鲜膜扎紧固定,移至锡箔纸上再卷起,将两端捏紧。(图2-4)
3. 鸡卷放入蒸锅中蒸20分钟,取出待凉后,去除保鲜膜和锡箔纸。(图5)
4. 将蒸好的鸡肉卷外面裹上一层粟粉,然后放入蛋液中滚一下,再沾上面包糠,均匀的沾满鸡卷表面。(图6-7)
5. 烧热油,用中火放入鸡卷炸至表面香脆即可,捞出沥油,再切成宽度相同的小卷即可。(图8)

【Ingredients】
2 Debone chicken whole legs, 4 cooked salted egg yolks (crushed), 1 small bowl orange color bread crumb, 1 beaten egg, 3 tbsp corn flour, 2 sheet
aluminum foil, 2 sheet cling film
【Method】
1. Flatten the chicken whole leg, cut loose its muscles to prevent they retract during cooking; and then sprinkle some salt & pepper over. (pic 1)
2. Spread salted egg yolk over the chicken whole legs, roll up and tighten with cling film; and then roll up with aluminum roll, secure both ends. (pic 2-4)
3. Steam the chicken roll in steamer for 20 minutes; cool down and remove cling film and aluminum foil. (pic 5)
4. Coat the chicken roll with corn flour and then dip in egg sauce and follow with bread crumb. (pic 6-7)
5. Heat oil in wok, deep fry the chicken roll until crispy; drain and slice to serve. (pic 8)
