焖药材鸡 Braised Chicken with Herbal

【材料】
全鸡1只、桂皮10克、八角、玉竹、北芪各10克、枸杞30克、红枣40克、党参20克、蚝油适量、清水500毫升、盐适量
【做法】
1. 起锅热油,放入所有药材,炒5分钟。(图1-2)
2. 将药材移入深锅,倒入清水,加入调味料煮至滚。
3. 放入鸡,焖煮45分钟即可。(图3)

【Ingredients】
1 whole chicken, 10g cinnamon stick, 10g star anise, 10g YuZhu, 10g BeiQi, 30g wolf berries, 40g red
dates, 20g DangSheng, oyster sauce to taste, 500ml water, salt to taste
【Method】
1. Heat up oil in the wok.
2. Add in the herbal and stir-fry for 5 minutes. (pic 1-2)
3. Transfer the herbal into a big pot, pour in water and add in the seasoning, bring to boil.
4. Put in the chicken and boil for 45 minutes, done. (pic 3)

 

鸡精蒸鸡 Steamed Chicken with Chicken Essence

【材料】
全鸡1只、枸杞30克、红枣30克(切丝)、姜50克、盐适量、蒜头20克、嫩姜10克(切丝)、白兰氏鸡精1罐 (后下)
【装饰】
莞荽少许
【做法】
1. 以盐腌鸡备用。
2. 把鸡只剖开或斩件排放在大盘上,铺入所有其他材料。(图1-2)
3. 放入预滚的蒸炉里,蒸30-35分钟。(图3)
4. 淋上白兰氏鸡精,再蒸5分钟即可。(图4)

【Ingredients】
1 nos whole chicken, 30g wolfberries, 30g red dates (Juliene), 50g ginger,salt to taste, 20g garlic, 10g
young ginger (Juliene), 1 bottle Brands’s chicken essence (add last)
【Garnishing】
Some coriander leaves
【Method】
1. Marinate chicken with salt.
2. Place chicken on plate and add in all other ingredients. (pic 1-2)
3. Steam the chicken for 30 to 35 minutes in preheated steamer. (pic 3)
4. Pour in Brand’s chicken essence, steam for further 5 minutes. (pic 4)

 

盐酥鸡 Salted Chicken

【材料】
鸡全腿2只(去骨切块)、咖哩叶3束
【腌料】
生抽1汤匙、盐少许、胡椒粉少许、蒜茸1茶匙、
【椒盐】(小火炒香)
幼盐1茶匙、胡椒粉½茶匙、鸡精粉½茶匙、红辣椒粉少许(随意)
【脆面糊】混匀
面粉3汤匙、粟粉2汤匙、盐少许、水适量
【干沾粉】(混合)
粘米粉2汤匙、生粉2汤匙、面粉2汤匙
【做法】
1. 将腌料与鸡肉拌匀,腌置½小时。
2. 倒入脆面糊捞匀,再沾裹乾粉,然后放入热油中炸至12分钟,捞出待稍冷些。(图1-3)
3. 再次烧热油锅,再把鸡块回锅,以大火烤脆捞出,沥油备用。
4. 放入咖哩叶炸至香脆,捞出沥油。(图4)
5. 最后把炸好的鸡块、椒盐、咖哩叶放入大碗中,拌均匀便可。(图5)

【Ingredients】
2 Debone chicken whole legs, 3 stalks curry leaves
【Condiments】
1 tbsp soy sauce, dash of salt & pepper, 1 tsp chopped garlic
【Pepper salt】 (sauté in low heat)
1 tsp salt, ½ tsp pepper, ½ tsp chicken powder, dash of red chili powder (optional)
【Batter ingredients】
3 tbsp plain flour, 2 tbsp corn flour, dash of salt and some water
【Dry flour】 (pre-mixed)
3 tbsp rice flour, 2 tbsp corn flour, 2 tbsp plain flour
【Method】
1. Marinate chicken meat with condiments for ½ hour.
2. Pour in batter to mix up and then coat with dry flour and deep fry for about 12 minutes, dish out to cool
down a bit. (pic 1-3)
3. Heat the oil again, refry chicken until crispy, drain.
4. Toss in curry leaves and deep fry until crispy, drain. (pic 4)
5. Toss fried chicken with mixture of pepper and salt until well coated, sprinkle in the curry leaves, dish
out to serve. (pic 5)
