奶香巧克力芝士月饼Chocolate Cheese Mooncake

【皮料】
A:低筋面粉220克、蛋黄粉45克、糖粉75克、牛油100克、蛋黄1粒、凡尼拉香精1茶匙
B:蛋黄1粒、水1汤匙、盐 1⁄4 茶匙(涂面料)

【馅料】
友爱巧克力莲蓉900克、友爱芝士莲蓉750克、瓜子60克(烘香)、咸蛋黄16粒(蒸熟)

【做法】
1.把皮料A放入搅拌机搅拌成一软面团,取出休息 1⁄2小时后分割成每份40克重。(图1-2)
2.把瓜子分别加入巧克力莲蓉及芝士莲蓉馅混合均匀。(图3-4)
3.把巧克力莲蓉与芝士莲蓉分别分割成每份60克重。
4.取一份芝士莲蓉馅包入一粒咸蛋黄,外层包入一份巧克力莲蓉馅搓圆。(图5-6)
5.取一份皮料包入馅料揉圆,放入模型压紧,然后轻敲两旁,反扣出来。(图7-9)
6.把月饼放入已预热的烤箱以180℃烤约20分钟,取出待凉些再涂上蛋液,继续烘约5分钟。(图10)

【Skin Ingredients】
A:220g super fine flour, 45g custard powder, 75g icing sugar, 100g butter, 1 egg yolk, 1 tsp vanilla essence
B:1 egg yolk, 1 tbsp water, 1⁄4 tsp salt (for grazing)

【Filling Ingredients】
900g You AI chocolate lotus paste, 750g You AI Cheese flavour lotus paste, 60g pumpkin seeds (toasted), 16 salted egg yolk (steamed)

【Method】
1.Knead skin ingredients A into soft dough, let rise for 30 minutes and then apportion into 40g each.(pic 1-2)
2.Mixes melon seeds with chocolate and cheese lotus paste separately.(pic 3-4)
3.Divide chocolate lotus paste and cheese lotus paste into 60g each.
4.Wrap one salted egg yolk in each cheese lotus paste and then wrap in chocolate lotus paste.(pic 5-6)
5.Wrap a portion of dough with a portion of filling, shape round and press into mould, dislodge on baking tray.(pic 7-9)
6.Bake in pre-heated oven at 180℃ for 20 minutes, remove from oven and let cool briefly, brush with egg sauce and continue bake for another 5 minutes.(pic 10)
