蛋糕材料
牛油125克、盐1/4茶匙、细糖200克、A蛋2粒、普通面粉140克(筛过)、发粉1茶匙、小苏打粉1/2 茶匙、可可粉50克、鲜奶125毫升、滚水80毫升、即溶咖啡1茶匙、白兰地1汤匙
9寸圆盘(涂油铺纸)
125 g butter, 1/4 tsp salt, 200 g castor sugar, 2 “Grade A” eggs, 140 g plain flour(sifted), 1 tsp baking powder , 1/2 tsp bicarbonate of soda, 50g cocoa powder, 125 ml fresh/UHT milk, 80 ml hot boiling water, 1 tsp instant coffee granules, 1 tbsp brandy
9“ round cake pan(greased and lined)

巧克力霜
可可粉50克、栗米粉60克、细糖50克、A蛋黄2个、炼奶125毫升、鲜奶375毫升、牛油125克
50 g cocoa powder, 60 g corn flour, 50 g castor sugar,2 “Grade A” egg yolks, 125 ml condensed milk, 375 ml fresh milk, 125 g butter

装饰
kitkat巧克力饼和M&Ms各 2大包、彩带
2 large packets kitkat, 2 big packets M&Ms, Ribbon to tie cake

巧克力霜做法
1.把可可粉和栗米粉筛入容器里,加入糖、炼奶、鲜奶及蛋黄,以手打器混合至细滑。(图1-2)
1.Sift cocoa powder, corn flour into container. Add castor sugar, condensed milk, fresh milk and egg yolks, slowly mixing with a wire whisk.(pic 1-2)

2.隔水以中火搅拌煮至稠。
2.Double boil cocoa mixture over medium heat, stirring until frosting thickens.

3.熄火,马上加入牛油,然后盖保鲜膜以防表皮结痂。待完全冷却才用。(图3)
3.Remove from heat and stir in butter immediately. Cover with a cling film to prevent a layer of skin forming on the frosting. Leave to cool completely before using. (pic 3)

蛋糕做法
1.把烤炉预热至180℃。
1.Preheat oven to 180℃.

2.把牛奶和可可粉混合。
2.Combine milk with the sifted cocoa powder.

3.以滚水冲泡即溶咖啡,然后加入可可粉料。(图4)
3.Dilute instant coffee granules with boiling water and then mix into cocoa mixture.(pic 4)

4.用电动搅拌器把奶油、糖及盐搅拌均匀,然后加入鸡蛋搅拌至发起。(图5)
4.Using an electric beater, cream butter, castor sugar and salt. Beating in eggs till light and fluffy. (pic 5)

5.把面粉,发粉及小苏打粉筛在一起。取三分一加入发起奶油,然后拌入半分巧克力混合料,再加入三分一的粉料和剩余的巧克力混合料,最后加入剩余的粉料拌匀。 避免搅拌过度。
5.Sift together the flour, baking powder and soda bicarbonate. Add one-third of sifted flour mixture to the creamed butter, followed by half the melted chocolate mixture. Add another third of flour, then the remaining chocolate mixture. Then add the rest of the flour. Do not over-beat.

6.加入白兰地酒,以钢匙搅拌均匀,然后把材料倒入蛋糕盘里。放入烤炉烤35-40分钟。(图6-7)
6.Stir in brandy and using a metal spoon, pour the cake batter into the prepared cake pan and bake in oven for 35-40 minutes. (pic 6-7)

7.以竹签测试熟度后待完全冷却才涂上巧克力糖霜,旁边围上Kitkat巧克力饼,再撒上M&Ms糖装饰。(图8-10)
7.Test to see if cake is done by inserting skewer in the centre of cake, let cool completely before spreading the cake with chocolate frosting, decorate the side with Kitkat and top with M&Ms.(pic 8-10)
