白兔月饼Rabbit mooncake

【饼皮材料】
黄金糖浆250克(现买)、花生油110克、碱水1茶匙、普通面粉430克、额外面粉30克

【馅料】
莲蓉400克、巧克力粒100克、葡萄干100克
蛋液:蛋黄1粒+食油1汤匙+蛋白1⁄2汤匙

【饼皮做法】
1.把糖浆、花生油及碱水混合。盖上保鲜膜,醒1小时。
2.慢慢拌入面粉搓成面团,盖上保鲜膜,再醒1小时。如果面团太黏手,可加1-2汤匙面粉。(图1-2)

【兔子月饼做法】
1.把馅料材料全部捞匀搓好,分成50克1份。(图3)
2.把月饼皮料分成60克等份。
3.压平面团成圆形,中间包入馅料。(图4-5)
4.用掌心把包馅面团做成水珠状小球。
5.轻压前半部,做成兔子头。
6.挤压两边,用刷子把耳部弄湿然后粘上两个小水珠面团充作耳朵。(图6)
7.用刷子柄部在眼睛部位作记号,用水弄湿,贴上红豆当眼珠。另外用小面团作鼻子。(图7)
8.最后再做一个较大圆球面团作尾巴,用刷子涂水粘上。(图8)

【组合】
1.把烤炉预热至180℃,烤盘涂油。
2.在整只兔子涂蛋液,然后放在涂油烤盘内,放入烤炉里烤20分钟,取出让它冷却。(图9-10)

【Skin Ingredients】
250 g golden syrup(store bought), 110 ml peanut oil, 1 tsp lye water, 430 g plain flour(sifted), extra 30 g plain flour

【Filling Ingredients】
400g Lotus paste, 100 g choc chips, 100 g raisins
Egg wash : 1 egg yolk + 1 Tbsp oil + 1⁄2 Tbsp egg white

【To made skin】
1.Combine golden syrup, oil & lye water in a mixing bowl, cover with a cling film & rest for 1 hour.
2.Slowly sift in the flour and mix into a dough. Cover with cling film and rest for another hour before using. (pic 1-2)

【To shape into bunny mooncake】
1.Mix all the filling together, scale into 50g per portion.(pic 3)
2.Scale mooncake dough into 60 g portions.
3.Flatten dough, place the filling in the centre & wrap into a ball. (pic 4-5)
4.Using palms, lightly shape into a tear-drop like ball of dough.
5.Press lightly 1/3rd of the bunny with your fingers, for the head.
6.Lightly press the 2 sides to denote the ears.Shape a small tear drop from the dough, for the ears.(pic 6)
7.Brush with some water & press the ears to adhere.
8.Mark the eye positions with the back of the brush, brush some water as glue, then place the red bean/ quinoa for the eyes. Shape a small ball of dough for the nose.(pic 7)
9. Shape a bigger ball for the tail, brush with water & stick the tail onto the bunny. (pic 8)

【To bake mooncakes】
1.Preheat oven to 180℃, grease trays.
2.Brush with egg wash & bake for 20 minutes. Remove from oven to cool. (pic 9-10)
