炸咖喱鸡Spicy Fried Curry Chicken

材料:
鸡肉800克(斩成小块)、香茅2枝(拍烂)、咖喱叶2束、食油1/2杯、清水1/2杯

腌料:
盐1/2茶匙、胡椒粉1/4茶匙、黑胡椒粉1/4茶匙、麻油1/2茶匙、芡粉1汤匙

香料(磨幼):
红辣椒5条(去籽)、辣椒干10条(浸软去籽)、黄姜1公分、肉类咖哩粉3汤匙、葱头12粒、大葱1粒、蒜头4瓣、蓝姜3片、石古仔3粒

调味料:
白糖2汤匙(或适量)、盐适量、鱼露1汤匙、酸柑汁3汤匙

做法:
1.用腌料把鸡肉块腌数小时或腌过夜,然后在热油中炸5-6分钟。
2.热半杯食油,把香茅、咖喱叶及磨幼香料炒至香味四溢和出油。
3.加入炸好的鸡肉熟透及汤汁转稠,即可调味盛出。

【小贴士】
鸡肉炸过含有特别的香味,咖喱可以配白饭吃。

Ingredients:
800g chicken(chopped into bite-sized pieces) 2 stalks lemon grass (smashed), 2 stalks curry leave, 1/2 cup oil, 1/2 cup water

Marinade:
1/2 tsp salt, 1/4 tsp pepper, 1/4 tsp ground black pepper, 1/2 tsp sesame oi, 1 tbsp corn flour

Spices: (Grind into a paste)
5 red chillies (seeds removed), 10 dried chillies (soaked and seeds removed), 1 cm fresh turmeric, 3 tbsp meat curry powder, 12 shallots, 1 onion,4 cloves garlic,3 slices lengkuas,3 candlenuts

Seasoning:
2 tbsp sugar (or to taste), salt to taste, 1 tbsp fish sauce, 3 tbsp lime juice

Method:
1.Season chopped chicken with marinade ingredients for several hours or preferably overnight. Deep-fry in hot oil for 5-6 minutes. Dish out.
2.Heat wok with half cup oil,saute lemon grass,curry leaves and spices until fragrant and oil separates.
3.Put in fried chicken. Fry for a while and add water. Cover and cook simmered over low heat until chicken is just cooked and gravy is thick. Add in seasoning.
