彩蛋青瓜卷Stuffed Cucumber Roll

【材料】
日本青瓜2条、青、红、黄甜椒各1⁄2粒、鸡蛋3粒、豆苗适量

【调味料】
鸡精粉1茶匙、胡椒粉少许、粟粉水1茶匙、盐少许

【做法】
1.将青瓜整条刮成薄片,然后放入盐水中浸泡使其软化。(图1)
2.甜椒切成细丁,鸡蛋打散,加入调味料及甜椒丁拌匀。(图2-5)
3.烧热少许油,倒入蛋液料拌炒至凝固,盛出。(图6)
4.把每片青瓜卷成桐柱形,再填入鸡蛋馅便可上碟 ,并以豆苗装饰。

【Ingredients】
2 Japanese cucumbers, each 1⁄2 of green, red & yellow capsicums, 3 eggs, some pea sprouts

【Seasoning】
1 tsp chicken powder, dash of pepper, 1 tsp starch, dash of salt

【Method】
1.Slice the whole cucumber into long thin slices and then soak in salted water until soften.(pic 1)
2.Dice capsicums, beat egg and then mixes all with seasoning.(pic 2-5)
3.Heat some oil in wok, sauté egg mixtures until cooked, dish out.(pic 6)
4.Roll cucumber each slice into cylinder form, stuff in the egg filling and garnish with pea sprouts.
