橙味芝士红萝卜蛋糕 Orange-Carrot Cake with Cream Cheese

【材料】
核桃100克(烤香剁碎)、牛油300克(室温)、盐 1⁄4茶匙、细糖200克、A
蛋4粒、普通面粉300克(筛过)、小苏打粉2茶匙、桂皮粉2茶匙、
澳洲红萝卜250克(刨茸)、葡萄干100克、橙皮茸2个、橙汁60毫
升、香草精11⁄2 茶匙、 牛奶60毫升
【芝士糖霜】
芝士奶油500克(室温)、牛油120克(室温)、糖粉120克、橙皮茸2个
9寸圆蛋糕盘3个–涂油铺油纸
【做法】
1. 用电动搅拌器把牛油、盐及糖以中速搅拌均匀,然后逐个把鸡蛋加入。
2. 把全部粉料、胡萝卜茸、葡萄干及核桃碎加入搅拌均匀。(图1-3)
3. 最后加入橙皮茸、橙汁、香精及牛奶搅拌均匀。(图4)
4. 把面糊平均倒入3个蛋糕盘里, 放入预热至180℃的烤炉里烤15-20分钟,以竹签测试熟度(蛋糕中间会下沉少许)。(图5)
5. 让蛋糕在盘里完全冷却后扣出。
【芝士糖霜做法】
把所有材料混合搅拌至发起。
【组合】
1. 在一层蛋糕上涂抹芝士糖霜,然后叠上一层蛋糕,再涂抹芝士糖霜,再叠蛋糕,然后在蛋糕面层和周围涂满芝士糖霜,并随意划上花纹。(图6-9)
2. 蛋糕面上撒少许核桃碎,以拱圆形盖子盖住,收入冰箱,吃时取出切块上桌。(图10)

【Ingredients】
100 g walnuts(chopped & toasted), 300g butter(at room temperature), 1⁄4 tsp salt, 200 g castor sugar , 4 large “Grade A” eggs,
300 g plain flour(sifted), 2 tsps bicarbonate of soda(sifted), 2 tsps ground cinnamon(sifted), 250g finely grated Australian carrot,
100g raisins, zest of 2 oranges, 60 ml orange juice, 11⁄2 tsps vanilla essence, 60 ml milk
【Cream Cheese Frosting】
500 g cream cheese(at room temperature), 120 g salted butter(at room temperature), 120g icing sugar, grated zest of 2 oranges
9” round cake pans (greased & lined) X3
【To prepare cake】
1. Using an electric beater, cream butter, salt and sugar together in a mixing bowl on medium speed. Beat in eggs 1 at a time, blending
well after each addition.
2. Fold in sifted dry ingredients, grated carrots, raisins & walnuts.(pic1-3)
3. Stir in orange zest and juice, vanilla essence & milk. (pic 4)
4. Divide batter evenly into 3 prepared cake pans, bake at 180℃ for 15- 20 minutes or until a skewer inserted into center of cake
comes out clean. (Layers may sink a bit in the middle.)(pic 5)
5. Let cakes cool in pans completely before unmoulding.
【To prepare frosting】
Whisk all ingredients until fluffy.
【To assemble cake 】
1. Place 1 cake layer on platter. Spread with some frosting. Top with second cake layer. Spread remaining frosting over top and
sides of cake. Using a plastic spoon, decorate the sides with fork streaks.(pic 6-9)
2. Decorate surface of the cake with grated walnut. Cover with cake dome and refrigerate. (pic 10)
