炸芋丝 Yam Fries

【材料】
芋头180克、虾米15克、粘米粉20克、面粉20克、汀面
粉10克、水适量
【调味料】
盐1⁄4茶匙、鸡精粉1⁄4茶匙、胡椒粉少许
【做法】
1. 将芋头去皮刨丝,虾米洗净浸泡1分钟后沥干剁碎。

2. 把全部材料与调味料加入芋丝中拌匀。(图3-4)
3. 烧热温油,用叉舀入适量芋丝糊,以小火炸至芋丝轻
身浮起。(图5)
4. 转中火再炸片刻至香脆,便可捞出放在吸油纸上,吸
干油收入密封瓶子。

【Ingredients】
180g yam, 15g dried shrimp, 20g rice flour, 20g plain flour,
10g wheat starch, some water
【Seasonings】
1⁄4 tsp salt, 1⁄4 tsp chicken powder, dash of pepper
【Method】
1. Peel and juliennes yam; soak dried shrimp for 3 minutes,
drain and chopped. (pic 1-2)
2. Combine all ingredients and seasoning with yam.(pic
3-4)
3. Heat oil in wok, deep fry small amount of yam batter at a
time with low heat until all afloat.(pic 5)
4. Turn to medium heat; continue deep frying until crispy,
drain and store in airtight container.
