横财就手( 玫酒烩猪手 )Braised Pig Trotters With Rosedew

材料
猪手1只、花椒半茶匙、桂皮1条、八角2粒、姜1小块(切片)、蒜头1粒(切片)、清水盖过猪手

调味料
盐1茶匙、冰糖100克、兴兴发特醇米酒1汤匙、
玫瑰露酒(ROSEDEW)150毫升、
老抽2汤匙、长城牌天津浙醋1茶匙、
胡椒粉1茶匙、生抽1汤匙

做法
1.猪手洗净后按骨缝分成小块。
2.煮滚水,放入少许姜片、青葱和生抽,放入排骨焯烫一下,捞出后再洗净表面的血沫,备用。
2.气压锅加入少许的油再放入姜丝、蒜片爆香,放入猪手块,小火翻炒五分钟。
3.淋入兴兴发特醇米酒和长城牌天津浙醋焖烧三分钟,再加入剩余的材料,注入足以盖过猪手表面上的清水,再加入调味料,关盖,焖煮20分钟。
4.把气压锅时间到把蒸气解放,把猪手放入碗里。
5.将汤汁倒出来去锅里开火煮滚再转小火勾少许芡粉最后放入少麻油,熄火。
6.再把酱汁淋在猪手再放些芫西叶和红辣椒丝点缀即可。

 

Ingredients
1 pig trotters, ½ tsp peppercorn, 1 Cinnamon,
2 star anise, 1 small piece ginger (shredded),
1 whole garlic (chopped), some water (enough cover the pig trotters)

Seasoning
1 tsp salt, 100g rock sugar, 1 tbsp Pearl River Bridge Super Mellow Miziu, 150ml Rosedew,
2 tbsp dark soy sauce, 1 tsp Greatwall Vinegar,
1 tsp pepper, 1 tbsp soy sauce

Method
1. Wash trotters and cut in small size, blanch into boiling water, drain and set aside.
2. Heat some oil in pressure cooker, sauté ginger and garlic till fragrant. Add in pig trotters, fry with low heat for 5 mins.
3. Pour in Pearl River Bridge Super Mellow Miziu and Greatwall Vinegar, simmer for 3 minutes. Add in remaining ingredients and water which enough to cover all the ingredients. Toss in seasoning, mix well ,cover the lid and cook for 20 minutes.
4. Release the air before remove the trotters.
5. Use the trotters sauce cook with low heat, thicken with some corn starch, off heat.
6. Pour over the sauce on trotters, garnish with some chilli shredded and coriander leaves, done.
