    Step 1

    取一大搅拌碗,放入水和酵母混合。安装面团钩,以低速搅拌混合。静置30秒,再次搅拌。Combine water and yeast in a large mixing bowl. Fit dough hook and mix on low speed to combine. Stand for 30 secs and mix again.

    取另一大碗,将面粉、玉米粉、盐、糖和奶酪混合均匀,慢慢加入到酵母中,揉6-8分钟直到面团具呈现光滑与弹性后,把面团放入已涂油的碗中,盖上保鲜膜,放在温暖的地方发酵约30分钟。In a separate bowl, combine flour, corn meal, salt, sugar and cheese. Mix briefly. Add the flour mixture gradually to the yeast mixture on low speed. Knead till elastic and smooth, for about 6-8 minutes. The dough will be very soft and sticky. Place dough in a lightly greased bowl, cover with oiled cling film, and stand in a warm place, about 30 minutes.

    Step 3

    取出发酵面团,洒一些粉在表面,轻轻推揉成大圆形,两侧往中间折叠,铺上墨西哥辣椒,然后像制作瑞士卷一样卷起来。把面团放回涂油的碗中,盖上保鲜膜继续发酵约30分钟。Scrape the dough onto a floured surface. Flour your hands and gently flatten it into a disc. Fold the two sides in to overlap in the middle. Sprinkle the jalapeno chilies from top to bottom and roll the top towards you all the way to the bottom like a swiss roll. Return the dough to the greased bowl, cover with oiled cling wrap and stand in a warm place until doubled in bulk, about 30 minutes.

    Step 4

    桌上洒一些面粉,取出面团推揉成球型。Using a flexible plastic scraper, slide the dough onto a floured surface. Fold the edges all around into the centre. Invert the dough and round the loaf by pushing against the bottom all around with the sides of your hands held palms upwards. Form into a ball.

    烤盘涂油并铺上烘焙纸,把面团放入盖好,并继续发酵30分钟至双倍大。Lightly grease a large baking sheet or pizza pan and line with baking paper. Transfer the dough to the baking sheet and cover it with an oiled cling film. Stand in a warm place until doubled in size, about 30 minutes.

    Step 6

    预热烤箱220℃。Meanwhile preheat oven to 220℃ with a low rimmed roasting tray inside the oven.

    Step 7

    小心取下保鲜膜,轻轻喷洒一些水在面团表面。烤盘中添加8个冰块,以便在烘烤时能产生蒸汽。先以220℃烘烤5分钟,之后减低温度至200℃,继续烘烤20-30分钟至金黄色。可以轻敲面包测试熟度,如果声音听起来很空心,代表面包好了。Remove cling wrap carefully from the risen loaf. Spray surface lightly with water.Place the baking sheet on a rack above the roasting tray and add about 8 ice cubes to the tray to generate steam while baking. Bake for 5 mins, then reduce oven temperature to 200℃. Continue baking for 20-30 mins until golden. Test doneness by tapping the loaf. If it sounds hollow, the loaf is done.

    Step 8

    从烤箱中取出面包,放在架上冷却。Remove loaf from the oven and cool on a wire rack.

    Step 9

    这款面包很适合配汤或者蘸酱汁一同食用。Slice and serve with soup or a roast meat dish. This bread is good for dipping in gravy.
