奇豆炸豆腐 Fried Tofu

【材料】
玉子豆腐3条、虾仁150克、蚧肉50克、马蹄3粒、鸡蛋5粒、粟粉1汤匙、葱花1汤匙
【调味料】
盐1⁄2茶匙、鸡精粉1茶匙、胡椒粉少许、麻油1茶匙
【脆浆粉】
面粉2汤匙、粟粉2汤匙、糯米粉2汤匙、发粉1汤匙、水适量、油3汤匙
【蘸豆腐】
泰式辣椒酱1⁄2小碗
【做法】
1.将虾仁以1汤匙粟粉及盐抓洗,然后以清水冲洗干净,抹干水份,用刀拍扁成泥状待用。(图1-2)
2.马蹄去皮剁碎,玉子豆腐压烂。(图3)
3.把上述处理好的材料放入大碗中,打入鸡蛋并加入其余材料及调味料,充份搅拌均匀。(图4-5)
4.把豆腐混合料倒入已抹油并铺上一张油纸的四方蒸盘上。(图6)
5.待蒸锅水滚后移入以中火蒸约20分钟至熟,取出待凉后切块。(图7)
6.把脆浆开成面糊,裹上每一片蒸豆腐,然后以热油炸至香脆,捞出沥油,蘸上辣椒酱享用。(图8)

【Ingredients】
3 blocks Japanese egg tofu, 150g shrimp, 50g crabmeat, 3 water chestnut, 5 eggs, 1 tbsp corn flour, 1
tbsp chopped spring onion
【Seasonings】
1⁄2 tsp salt, 1 tsp chicken powder, dash of pepper, 1tsp sesame oil
【Batter】
2 tbsp plain flour, 2 tbsp corn flour, 2 tbsp glutinous flour, 1 tbsp baking powder, some water, 3 tbsp oil
【Dipping sauce】
1⁄2 small bowl Thai chili sauce
【Method】
1.Rub shrimp with 1 tbsp corn flour and salt; then wash under running tape water, pat dry with kitchen
towel, and then smash.(pic 1-2)
2.Skinned water chestnut and chopped; smash tofu.
3.Mixes above ingredients with eggs and all other ingredients and seasoning.(pic 4-5)
4.Pour the mixture onto a greased square tray.(pic 6)
5.Steam with medium heat for 20 minutes or until cooked; cool down before cut into pieces.(pic 7)
6.Coat each tofu cake with batter and then deep fry until crispy, drain and serve with chili sauce.(pic 8)
