    Directions

    Step 1

    【派皮做法】 1. 将面粉和糖粉过筛,加入冷藏牛油,用手将牛油 捏碎和面粉混合均匀。 2. 加入蛋液,揉成面团后,放入雪柜冷藏至少一个 小时,备用。【Method for pastry】 1. Sift flour and icing sugar in mixing bow, add in cold butter, rub with finger tips to form bread crumb. 2. Add in egg and knead into dough, keep in fridge for 1 hour.

    Step 2

    【鸡肉馅料做法】 1. 鸡肉丁加入蚝油和黑胡椒,腌15分钟。 2. 烧热油锅,放入鸡肉和蘑菇,翻炒至均匀,加入 罐头白酱煮至滚,即可熄火上锅,备用。【Black pepper Chicken filling】 1. Marinate chicken cubes with oyster sauce and black pepper for 15 minutes. 2. Heat oil in wok, stir-fry chicken cubes and mushroom until well mixed, add in Carbonara Mushroom and bring to boil, dish out.

    Step 3

    薯泥加入所有的材料,搅拌均匀后,装入花嘴袋, 备用 Mixes all ingredients and store in piping bag with nozzle.

    Step 4

    【派做法】 1.将烤箱预热至180℃。 2.用檊面棍将派皮面团檊成约3mm厚度的面皮,再用 一个大碗口切割出圆形,铺在玛芬模子上,将面皮紧 贴玛芬模上,用叉子在派皮上刺洞。 3. 在派皮上铺上烤纸,再放上一些压派石,烤约15分 钟后,移开压派石,再烤10分钟,备用。 4. 将黑胡椒鸡馅料舀入派皮里,挤上马铃薯泥,再送 进烤箱,烤15分钟或直到马铃薯泥呈金黄色即可, 趁热享用。【Method for Shepherd Pie】 1. Pre-heat oven to 180℃. 2. Pin roll the dough into 3mm thick pastry and then cut out round shape, press firmly into muffin mould; follow by pinching hole on the surface with folk. 3. Place greased proof paper on top of pastry and sit with heavy stone, bake in oven for 15 minutes; remove stones and continue baking for another 10 minutes. 4. Place black pepper chicken filling into baked pie, pipe in mashed potato and bake in oven again for 15 minutes or until golden brown. Serve hot.
