焖煮水果蛋糕 Boiled Fruit Cake

材料:

混合干果350克、黄糖85克、盐1/2茶匙、混合香料粉1茶匙、橙皮茸(1个) 、清水或橙汁1/2杯、威士忌或白兰地1/4杯、牛油125克、A蛋2粒(打散) 、自发面粉125克(筛过) 、普通面粉125克(筛过) 、小苏打粉1/2茶匙

做法:

  • 把干果倒入内锅里,加入黄糖,混合香料、橙皮茸、水、酒及牛油。
  • 把材料煮滚后不加盖焖5分钟。
  • 让材料冷却5分钟。
  • 加入鸡蛋。然后加入面粉和小苏打粉。
  • 把混合材料倒入较大的内锅后才放入焖烧锅里,焖煮至少4小时。
  • 用竹签测试蛋糕中央,不沾物即是熟透。
  • 若是熟不透,把内锅里的蛋糕再次煮热,然后再放回焖烧锅里,焖煮30分钟,这是最少的时间,放久一些也没关系,因为蛋糕不会因此干固。

提示:让蛋糕长时间继续留在焖烧锅里是没问题的,因为它不会干掉,所以你可以在临睡前做这种蛋糕,睡醒就有得吃了。

Ingredients:

 

350 g mixed Dried Fruit

85 g Brown Sugar

½ tsp salt

1 tsp Mixed Spice powder

Grated rind of an Orange

½ Cup of Water or Orange Juice

¼ Cup of Whiskey/Brandy

125 g of Butter

2 lightly beaten “Grade A” Eggs

125 g self raising flour, sifted

125 g Plain Flour, sifted

½ tsp Bicarbonate of Soda

 

Method:

  1. Place the dried fruit into saucepan with the brown sugar, mixed spice, orange rind, water liquor and butter.
  2. Bring the mixture to the boil and then simmer uncovered for 5 minutes.
  3. Allow the mixture to cool slightly like 5 minutes.
  4. Mix in the eggs. Stir in the sifted flour and soda bicarbonate.
  5. Place over the larger inner pot into the outer Thermal container for 4 hours minimum.
  6. To test if cake is cooled, insert a skewer into the centre of the cake, it should come out clean.
  7. If not completely cooked, boil the inner pot again, and then return to outer pot for 30 minutes more. Times given are minimum and cakes can be left for longer without drying out or overcooking.

Tips:

Remember that there is no problem with leaving your cake in the thermal cooker for quite a few hours as it will not dry out….you can even make the cake last thing at night before going to bed and take it out first thing in the morning.
