白巧克力芝士蛋糕 White Chocolate Cheese Cake

【材料】
消化饼100克(捣碎)、 溶解牛油40克、柠檬皮茸1⁄2粒、芝士奶油200克、发起鲜奶油150克、白巧克力100克
【水果酱】
小樱桃100克、白糖15克、栗米粉3克(加1汤匙水)
装饰:鲜草莓适量(切瓣)
【做法】
1. 把小樱桃和白糖一起煮至滚,以栗米粉水勾芡。(图1)
2. 把饼干碎,牛油及柠檬皮茸混合待用。
3. 把芝士鲜奶油搅拌至软化,如果有粒状可用滤网过滤。(图2)
4. 慢慢加入鲜奶油及溶解的白巧克力拌匀。(图3)
【组合】
1. 把樱桃果酱和少许鲜草莓粒放入玻璃杯子里。(图4)
2. 用挤袋挤入一层芝士,叠上一层饼底料。 (图5-6)
3. 再挤入一层芝士及一层饼干底料,放上鲜草莓装饰,冷藏后即可食后。(图7-8)
【Ingredients】
100g digestive biscuit crushed, 40g butter(melted), 1⁄2 nolemon zest, 200g cream cheese, 150g whipping cream,
100g white chocolate tempered
【Fruit Coulis】
100g cherries, 15g sugar, 3g corn flour (+1 tbsp water)
Garnishing: As needed fresh strawberries (cut into quarter)
【Method】
1.Boil cherries with sugar.Thicken with corn starch solution.( pic 1)
2.Mix the crushed biscuit, butter and lemon zest, set aside.
3.Beat the cream cheese till soft. Strain with a sieve if the mixture is lumpy. (pic 2)
4.Slowly add in the whipping cream. Fold in the melted tempered white chocolate.(pic 3)
【To Assemble】
1.Put cherry coulis and some strawberries in a glass.(pic 4)
2.Pipe the cheese mousse, follow by a spoon of biscuit base.(pic 5-6)
3.Top with another layer of cheese mousse and biscurt base, garnish with fresh strawberries. Chill before serve.(pic 7-8)
