    Directions

    Step 1

    起锅热油,把大葱炒至软,然后加入研磨材料,蓝姜、咖哩叶及香茅,炒至香。Heat oil in a saucepan and saute onion until soft and fragrant. Add spice ingredients,galangal,curry leaves and lemon grass. Fry until aromatic.

    Step 2

    加入茄子、清水、椰浆、淡奶及疯柑叶,煮至滚。Add brinjals,water,coconut milk ,evaporated milk and kaffir lime leaves. Bring to a brief boil.

    Step 3

    加入虾和臭豆,煮一会。Add in prawns and petai and cook for a while.

    Step 4

    加入调味料,试味后即可上桌。Adjust with seasoning to taste. Serve immediately.
