蜜汁芝麻骨 Honey Sesame Rib

材料 :
嫩排骨500克(斩件)、白芝麻1汤匙(炒香)
腌料 :
生抽1汤匙、盐¼茶匙、糖2茶匙、松肉粉1茶匙、粟粉1汤匙、旦黄粉1茶匙、面粉1汤匙
蜜汁酱:
酸梅酱2汤匙、蜜糖2汤匙、桔子汁2汤匙、蚝油1汤匙、糖½汤匙、麻油1茶匙、水3汤匙
做法 :
① 排骨加入腌料拌匀,腌置1小时备炸。
② 烧热炸油,放入排骨炸至香脆及熟,捞出沥油。(图1)
③ 把炸油盛起,倒入蜜汁酱煮浓稠,放入排骨兜匀,酱汁沾满排骨并撒入炒香芝麻拌一拌即可。(图2-6)

INGREDIENTS :

CONDIMENTS :
1 tbsp soy sauce, ¼ tsp salt, 2 tsp sugar, 1 tsp tenderizer, 1 tbsp corn flour, 1 tsp custard powder, 1 tbsp plain flour
SAUCE:
2 tbsp plum sauce, 2 tbsp honey, 2 tbsp lime juice, 1 tbsp oyster sauce, 1 tsp sesame oil, 3 tbsp water
METHOD :
1. Marinate ribs with condiments for 1 hour.
2. Heat oil in wok, deep fry ribs until crispy and cooked; drain. (pic 1)
3. Discard oil from wok, pour in sauce ingredients and cook until thicken, add in ribs and toss well; sprinkle sesame seeds over and dish out.
