酸辣猪手Sour & Spicy Shank

【材料A】
猪手1只(斩件)、辣椒干10条、红辣椒2条、蒜头2粒、酸姜100克

【调味料】
蚝油3汤匙、糖3大汤匙、生抽1汤匙、海鲜酱1汤匙、味精1/2茶匙、水梅4粒(去籽)、黑酱油1茶匙、水3 1/2碗、酸姜水3汤匙

【做法】
1.猪手以热水汆烫过,再用清水冲洗干净,备用。(图2)
2.蒜头洗净,用刀将每一瓣切割使之出味,红辣椒去籽切片。(图3)
3.烧热少许油入锅,放入蒜头和辣椒干爆香,跟着瞎调味料(除了水份)炒香。(图4)
4.加入猪手翻炒,并注入水机酸姜水煮滚后转小火焖煮至汁稍干及猪手够软。(图5)
5.加入酸姜及红辣椒炒匀即可上桌。(图6)

【Ingredients】
1 pig shank (chop into pieces), 10 pcs dried red chili, 2 red chili, 2 whole garlic, 100g pickled ginger

【Seasoning】
3 tbsp oyster sauce, 3 tbsp sugar, 1 tbsp soy sauce, 1 tbsp Hoisin sauce, 1/2 tsp MSG, 4 pcs salted plum (pitted), 1 tsp dark soy sauce, 3 1/2 bowls water, 3 tbsp soup from pickled ginger

【Method】
1.Blanch shank in boiling water, then wash and drain. (pic 2)
2.Wash garlic and scale on every pip to obtain strong flavor; seeded and slice red chili.(pic 3)
3.Heat oil and sauté garlic and dried chili until fragrant, then add in seasoning (except water).(pic 4)
4.Add in shank and stir fry for a few minutes, and then pour in water and pickled ginger soup, simmer in low heat after boiled. Simmer until the meat is tender and gravy dry up.(pic 5)
5.Add in pickled ginger and red chili before dish out. (pic 6)
