    Directions

    Step 1

    把元蹄洗净后以滚水川烫1-2分钟。Rinse pig’s trotter and blanch in boiling water for 1-2 minutes. Remove and put aside.

    Step 2

    起锅热麻油,把酱汁材料A爆香,然后加入香菇和蒜头。Heat sesame oil and fry all sauce ingredients A until fragrant. Add in mushrooms and whole garlic bulb.

    Step 3

    放入元蹄和酱汁材料B, 炒一会。Put in trotter and sauce ingredients B. Fry briefly for a short while.

    Step 4

    倒入清水,煮至滚,然后转小火焖煮1-1¼ 小时,中途加入红萝卜,煮至肉软时赞入绍兴花雕酒。Pour in water and bring to a boil. Reduce the heat and braise the trotter for 1-1¼ hours. Halfway through add carrot and continue to cook until meat is tender. Splash in Shao Xing wine.

    Step 5

    调味勾芡即可。Adjust with thickening solution.
