    Step 1

    花椒1大匙(炒香,磨成粉) 1 tbsp Sichuan Peppercorn (toasted and grind),

    Step 2

    把鸭用腌料抹匀,腌4个小时以上。 Marinate duck for at least 4 hours.

    Step 3

    将腌好的鸭放入蒸笼里蒸2个半小时至软。 Arrange duck into steamer and steam for 2½ hours till soft.

    Step 4

    把蒸好的鸭涂上蛋液裹上面粉 Rub the duck with egg sauce and then coat with plain flour

    放入滚油里,大火炸至金黄色,撈起滤干油,即可 deep-fried into hot oil until golden brown, drain, serve hot.
