腌酸姜蜜糖鸡块Honeyed Chicken with Pickled Ginger

材料:
大鸡腿2只、红辣椒2条(切片)、腌酸姜100克、酸姜水3汤匙

调味料:
蚝油1汤匙、糖2茶匙、蜜糖2汤匙、鸡精粉1/2茶匙

腌鸡料:
粟粉2汤匙、生抽1汤匙、水2汤匙

腌酸姜做法:
嫩姜刮皮洗净切薄片,加入盐捞匀腌置1小时,然后冲洗干净,抹干水份加入白醋和糖拌匀腌置3天后便可使用。(图1-2)

做法:
1.鸡腿切小块加入腌鸡料拌匀置放20分钟。(图3)
2.烧热适量的油至微热,放入鸡块过油,捞出沥油。(图4-6)
3.在另一个镬中热少许油,放入鸡块、调味料、辣椒、酸姜及酸姜水,快速兜炒即可捞起享用。(图7-8)

INGREDIENTS:
2 chicken whole legs, 2 red chili (sliced), 100g pickled ginger, 3 tbsp pickled ginger syrup

SEASONING:
1 tbsp oyster sauce, 2 tsp sugar, 2 tbsp honey, 1/2 tsp chicken stock granule

CONDIMENTS:
2 tbsp corn flour, 1 tbsp soy sauce, 2 tbsp water

METHOD FOR PICKLE GINGER:
1.Skinned ginger and slice thinly, and then marinate with salt for 1 hour. Wash and rinse the ginger, drain and marinate with vinegar and sugar for 3 days before using it. (pic 1-2)

METHOD:
1.Chop chicken into small pieces and marinate with condiments for 20 minutes. (pic 3)
2.Blanch chicken in warm oil. (pic 4-6)
3.Remove oil from wok, pour in chicken again and saut’e with chili until fragrant; toss in seasoning, pickled ginger and its syrup, stir-fry until chicken is cooked. (pic 7-8)
