牛转乾坤齐捞生Prosperity Yee Sang

材料A:60克红萝卜丝、60克白萝卜丝

材料B:150克芒果丝、120克雪梨丝、30克紫包菜丝、35克红酸姜丝、120克青苹果丝

材料C:120克奇异果条、120克红火龙果条、120克哈密瓜条

材料D:100克三文鱼片、1粒桔子、20克花生、10克熟白芝麻粒、20克香油、50克炸脆鱼皮

酱料:1茶匙MAGGI®Seasoning鲜味露、1茶匙MAGGI® Umami一品鲜、2茶匙MAGGI®酸柑粉、150克酸梅酱、50克苹果酱、5克薄荷叶幼丝

做法:

1.首先,将所有的材料A及B切丝;材料C切条;酱料拌匀,备用。

2.先将材料A整齐的排列在大碟上,再拼上材料B及C成八卦乾坤形。

3.捞生前,把材料E铺满在摆设好的蔬果上,淋上拌好的酱料,大家即可喜气捞生,欢喜享用。

厨艺小贴士:将红萝卜丝和白萝卜丝榨干多余水分,避免出水影响口感。

Ingredient A:

60gmCarrot (shredded),100gmSalmon fillet (sliced)

Ingredient B:
150 gm Mango (shredded)
120 gm Pear (shredded)
30 gm Red cabbage(shredded)
35 gm Pickled red ginger(shredded)
120 gm Green apple (shredded)

Ingredient C:
120 gm Kiwi (strips)
120 gm Dragon fruit (strips)
120 gm Honeydew (strips)

Ingredient D:
100 gm Salmon fillet (sliced)
1 whole Lime
20 gm Crushed peanuts
10 gm Cooked white sesame
20 gm Sesame oil
50 gm Fried fish skin

Sauce:
1 tsp MAGGI® Seasoning
1 tsp MAGGI® Umami Cooking Sauce
2 tsp MAGGI® Lime Seasoning Powder
150 gm Sour plum sauce
50 gm Apple sauce
5 gm Mint leaves (fine strips)

Preparation method:

1. Firstly, shred all the ingredients in A and B. For C, cut the ingredients into strips. In a separate bowl, mix all the ingredients for the Sauce and set aside.
2. Place ingredients A on a large plate in the shape of an octagram. On each side, arrange ingredients B & C, forming the “Ba Gua”.
3. To serve, place ingredients D on the plate, drizzle the sauce and the Prosperity Yee Sang is ready for a joyous toss.

Culinary Tips:

Drain the moisture in the carrots and white radish as it may affect the texture.
