芝士Oreo蛋糕 Oreo Chilled Cheesecake

【芝士顶料】
A:芝士奶油500克(室温)、盐1⁄2 茶匙、2 1⁄2汤匙鱼胶粉
B:练奶100克、无糖鲜奶油450克、柠檬汁30毫升现买Oreo饼两筒、9寸圆烤盘、现买食用花卉
【巧克力海绵蛋糕】
巧克力蛋糕粉料125克、A蛋3粒、牛奶或清水35克、溶解牛油35克
9寸圆烤盘(涂油)
【巧克力海绵蛋糕做法】
1.预热ELBA电烤炉至180℃。
2.将巧克力海绵蛋糕料(牛油除外)放入ELBA搅拌机内,以高速拌打8-10分钟至发起。(图1)
3.关掉电源,加入牛油拌匀,然后倒入蛋糕烤盘内,放入ELBA电烤炉烤20-30分钟至熟,以竹
签插入测试熟度,然后让它冷却。(图2)
【芝士顶料做法】
1.将装了半锅水的小锅放在ELBA电磁炉上,启动电源将鱼胶粉隔水煮至溶。(图3)
2.用ELBA搅拌机将芝士鲜奶油和盐搅拌至发起。
3.加入B料,拌打至松发。最后加入煮溶的鱼胶粉搅拌均匀。(图4)
【组合】
1.将巧克力海绵蛋糕放入蛋糕圆盘中,倒入 1⁄3芝士顶料,铺上Oreo饼。(图5)
2.再铺上另 1⁄3芝士顶料,然后排入Oreo饼,倒入最后1⁄3芝士顶料,用花卉装饰。(图6-7)
3.放入雪柜冷藏至少2小时后才切片吃。

【Cheese topping Ingredients】
A:500 g cream cheese(at room temperature),1⁄2 tsp salt, 2 1⁄2 tbsps gelatine
B:100g condensed milk,450g non-sweetened dairy cream, 30 ml lemon juice
2 tubes Oreo(store bought), 9” round cake pan, edible flowers (store bought)
【Chocolate Sponge Base】
125g instant choc sponge mix, 3 “Grade A” eggs, 35 g UHT milk/ water, 35 g melted butter
9” round cake pan, greased & lined
【To prepare chocolate sponge base】
1.Preheat ELBA Electric Oven at 180℃.
2. Using ELBA Stand Mixer, fitted with a balloon whisk, whisk instant sponge
mix, eggs & water/ milk over high speed about 8-10 minutes.(pic 1)
3. Turn off machine, fold in warm melted butter, pour into prepared cake pan
& bake in preheated ELBA Electric Oven for 20-30 minutes or until skewer
inserted comes out clean.Leave cake to cool completely before using.(pic 2)
【To prepare cheese topping】
1. Using ELBA Induction Cooker, melt gelatine indirectly in a double boiler or
water pot until gelatine dissolves. (pic 3)
2.Using ELBA Stand Mixer, beat cream cheese and salt until creamy.
3. Add in B ingredients & beat until mixture is creamy.Beat in hot melted gelatine
to the cream cheese mixture until well blended.(pic 4)
【To assemble cheesecake】
1.Lay chocolate sponge cake on the round cake pad, pour 1⁄3 cheese mixture
over sponge cake, lay a layer of Oreo biscuits covering the cheese layer.(pic 5)
2.Pour another 1⁄3 of cheese mixture before laying another layer of Oreo biscuits.
Cover with the balance cheese mixture. Garnish cake with flowers.(pic 6-7)
3.Chill in the refrigerator until set for at least 2 hours. Serve cake chilled.
