葡式烧烤素酱 Portuguese BBQ Sauce

【材料】切小段研磨成酱
红辣椒150 克、辣椒乾10 条(浸软)、香茅2 支、南姜30 克、黄姜30 克、包菜150 克、油5 大匙
【调味料】混合
盐½ 茶匙、黄糖1 汤匙、马来盏粉1 汤匙、黑胡椒粉2 汤匙、香菇调味粉1 汤匙、素虾米3 汤匙(煮热油3汤匙淋上)
【做法】
1. 把研磨的材料倒入锅,加入调味料一起炒至香。(图1-4)
2. 用小火继续煮10分钟即可,加上素虾米待凉,放入玻璃瓶,冰箱冷藏可以2保鲜个星期。(图5)

150g red chilli, 10 dried chilli (soaked), 2 stalks Serai, 30g galangal, 30g turmeric, 150g cabbage, 5 tbsp oil 9
【Seasoning】Combined
½ tsp salt, 1 tbsp brown sugar, 1 tbsp vegetarian belacan, 2 tbsp black pepper, 1 tbsp mushroom stock granule, 3 tbsp mock dried shrimp (pour in 3 tbsp hot oil)
【Method】
1. Sauté puree with seasoning until fragrant.(pic 1-4)
2. Continue simmer in low heat for 10 minutes; toss in mock dried shrimp and keep in jar once cool down. May store in fridge up to 2 weeks. (pic 5)

葡式素酱烤什菌 Portuguese BBQ Fungus

【材料】
包茹菇100 克、白玉菇50 克、鸿喜菇50 克、金针菇100 克、红番茄(切小块)120 克、姜花(切丝)½ 支、香蕉叶1 小片、锡箔纸20×10”一张
【调味料】混合
葡式素酱3 汤匙、水2 汤匙
【做法】
1. 把锡箔纸摊开,铺上香蕉叶。
2. 将什菌清理乾净,排放在蕉叶上,淋上调味料,浇上姜花丝,包好。(图1-4)
3. 把锡箔纸包放入烤箱烤10分钟即可,配饭享用。(图5)

【Ingredients】
100g Abalone mushroom, 50g white button mushroom, 50g shitake mushroom, 100g shimiji mushroom, 120g tomato (cubes), ½ stalk bunga kandang (juliennes), 1 small piece
banana leaf, 20×10” aluminum foil
【Seasoning】Combined
3 tbsp Portuguese BBQ sauce, 2 tbsp water (mix up)
【Method】
1. Flatten aluminum foil and top with banana leaf.
2. Clean all fungus and place over banana leaf, pour seasoning over, sprinkle Bunga kandang on top and wrap up. (pic 1-4)
3. Grill mushrooms parcel in electric oven for 10 minutes, done and serve with white rice. (pic 5)

葡酱烤四面豆 Portuguese BBQ Winged Bean

【材料】
四面豆100 克、白豆乾1 块、辣椒1 条、黄甜椒20 克、香蕉叶1 片、锡箔纸1 张18×9”
【调味料】混合
葡式素酱2 汤匙、水2 汤匙,拌匀
【做法】
1. 把锡箔纸摊平,铺上香蕉叶。
2. 将四面豆、白豆乾排上,淋上调味料,加上辣椒和黄甜椒,包好锡箔纸。(图1-4)
3. 将包裹放入烤箱烤10分钟,趁热配饭享用。(图5)

【Ingredients】
100g Winged bean, 1 block harden tofu, 1 red chili, 20g yellow capsicum, 1 piece banana leaf, 18 X 9 “ aluminum foil
【Seasoning】Combined
2 tbsp Portuguese BBQ sauce, 2 tbsp water
【Method】
1. Flatten aluminum foil and top with banana leaf.
2. Place winged bean and tofu on top, pour in seasoning, top with chili and yellow capsicum, wrap up. (pic 1-4)
3. Grill in electric oven for 10 minutes, serve hot with white rice. (pic 5)
