    Step 1

    丝瓜去皮切菱角狀洗净备用。Peeled the loofah and cut into pieces, washed and set aside.

    Step 2

    蒜米姜切碎备用,虾米汆烫去壳洗净,以及冬粉洗净备用。Chop the garlic and ginger for later use, blanch the dried shrimps and remove the shells, and wash the glass noodles for later use.

    Step 3

    热上油锅,爆香蒜米和姜,以大火爆香虾米。Heat oil in a wok, saute garlic and ginger until aroma, and sauté dried shrimp over high heat.

    Step 4

    下丝瓜炒软,加入上汤或清水大火煮滚。Fry the loofah until soft, add the broth or water and bring to a boil.

    Step 5

    把冬粉加入热锅里煮滚后以小火煮熟。Add the glass noodles in a pot and bring to a boil, then cook over low heat.

    Step 6

    下鱼露调味搅拌均匀即可上桌享用。Season with fish sauce and stir well before serving.
