辣椒蔬菜 Paprik Sayuran

┃材料┃
食油3-4汤匙、蒜头2瓣(剁碎) 大葱1粒(切丝)、疯柑叶2片(切丝)、虾80克(以糖和胡椒粉腌妥)、鸡肉60克(切丝)、茄子1条(切段)、红萝卜1小条(切花)、小玉米1包(切片)、甜豆1包(去梗丝)、清水100毫升、西芹1枝(切片)
┃调味料┃
辣椒酱2汤匙、蚝油1汤匙、胡椒粉½茶匙、盐适量
┃勾芡┃
生粉1茶匙+清水2汤匙
┃做法┃
1. 热一锅油,把茄子炸熟滴干油。(图1)
2. 留2汤匙油在锅里,把蒜头、大葱及疯柑叶炒香。
3. 加入红萝卜及其他蔬菜,再加水煮至菜软。(图2-3)
4. 加入西芹和调味料,试味。(图4-7)
5. 以生粉水勾芡即可。

┃INGREDIENT┃
3-4 tbsps cooking oil, 2 cloves garlic(chopped), 1 big onion (sliced), 2 kaffir lime leaves(torn), 80 g prawns(marinated with sugar & pepper), 60 g chicken meat (sliced ), 1 brinjal (cut into stems), 1 small carrot (cut into florets), 1 packet baby corn (sliced), 1 packet sweet peas (trimmed), 100 ml water, 1 stalk celery (sliced)
┃SEASONING┃
2 tbsps chilly sauce, 1 tbsp oyster sauce, ½ tsp ground white pepper, salt to taste
┃THICKENING┃
1 tsp cornflour + 2 tbsps water
┃METHOD┃
1. Heat sufficient oil & fry the brinjals, remove & set aside. (pic 1)
2. Leave about 2 Tbsps oil then sauté garlic & onions with kaffir lime leaves till fragrant.
3. Add carrots and the rest of the vegetables & water to allow the hard vegetables to cook. (pic 2-3)
4. Add celery,seasonings and adjust to taste. (pic 4-7)
5. Thicken with corn flour solution & turn off heat.
