Directions
先将茄子洗净切成长条状备用。Wash the eggplants and cut them into long strips.
烧热适量的油,放入茄子炸至稍微转色,捞起沥油备用。Heat some oil in a pan and fry the eggplants until they are slightly browned. Remove and drain excess oil, then set aside.
将素肉碎加入所有调味料,拌均匀备用。Mix the vegetarian minced meat with all the seasonings until well combined, and set aside.
烧热2大匙油,爆香姜丝,加入素咸余粒炒香,加入拌好的肉碎酱,继续拌抄至熟,再加入青红甜椒略拌抄。Heat 2 tablespoons of oil in a wok, stir-fry the ginger shreds until fragrant, then add the fried salted vegetarian dried shrimp and stir-fry until aromatic. Add the seasoned minced meat mixture and continue to stir-fry until cooked. Then add the green and red bell peppers and stir-fry briefly.
加入清水继续焖煮至稍微收汁,加入茄子,加入酱青、黑酱油素蚝油拌抄均匀。Add water and simmer until the sauce slightly thickens. Then add the eggplants, soy sauce, dark soy sauce, and vegetarian oyster sauce. Stir-fry until well combined.
盛盘加入芫茜点缀即可。Transfer to a serving dish, garnish with cilantro, and serve.
