    Step 1

    把茄子从蒂以下切条状,放入热油中川烫后滴干油。Cut brinjal into strips and blanch in boiling oil. Remove and drain.

    Step 2

    大火蒸茄子7-10分钟至软。Steam the brinjal on high heat for 7-10 minutes till soft.

    Step 3

    起锅热麻油和芥花籽油,把鸡肉碎,虾肉碎及虾米炒香。Heat sesame oil and canola oil and saute minced meat, prawns and dried prawns.

    Step 4

    加入辣豆瓣酱和甜豆酱,炒均后加入调味料。Add in chilli bean paste and sweet bean paste. Stir-fry well then add seasoning to mix.

    Step 5

    倒入清水,煮至滚后勾芡。Pour in water and bring to a boil, thicken with starch.

    Step 6

    把肉酱淋在茄子上,适当装饰即可上桌。Pour sauce over the brinjal and garnish as required.
