娘惹咖哩鸡 Nyonya Curry Chicken

【材料】
A:菜园鸡1.5公斤(斩件,用2汤匙咖哩粉腌好)、清水3杯、马铃薯300克(去皮切块)、浓椰浆250毫升
B:食油 1⁄2杯、八角1粒、丁香2粒、桂皮2cm、咖哩叶3束
【调味料】
适量盐及白糖调味
【研磨咖哩香料】
辣椒干15条、小葱头20粒(去皮切片)、蒜头3瓣、
峇拉煎1汤匙、黄姜2cm、芫荽籽2汤匙、小茴香3⁄4茶
匙、大回香1茶匙
【做法】
1. 将所有咖哩香料放入电动研磨器中磨细。(图1)
2. 在CORNELL΄s Multi Cooker内烧热油,爆香研磨咖哩至香,加入其余B料。(图2-3)
3. 加入鸡块拌炒均匀后注入清水(盖过鸡块)。(图4)
4. 加入马铃薯,继续煮至鸡肉及马铃薯熟透。(图5)
5. 最后加入浓椰浆及调味料,煮沸后熄火。(图6)

厨师叮咛:将咖哩放置6小时后才享用会更加入味。

【Ingredients】
A:1.5 kg chicken (cut into bite pieces, marinated with 2 tbsps curry powder), 3 cups water or more, 300g potatoes(peeled
& cut into wedges), 250 ml thick coconut milk
B: 1⁄2 cup cooking oil, 1 star anise, 2 cloves, 2cm cinnamon stick, 3 stalks curry leaves
【Seasoning】
salt & sugar to taste
【Spice paste: finely ground】
15 stalks dried chillies(soaked), 20 shallots(peeled & sliced), 3
cloves garlic, 1 tbsp belachan, 2cm turmeric, 3 tbsps coriander
seeds, 1 tsp cumin, 1 tsp fennel seeds
【Method 】
1. Using an electric blender, finely blend spicepaste ingredients until fine.(pic 1)
2. Heat oil in CORNELL΄s Multi Cooker, sauté ground spicepaste
until fragrant, stirring continuously. Stir in remaining
ingredients B. (pic 2-3)
3. Toss in chicken pieces & sauté for a while before adding water.(pic 4)
4. Half way through cooking, add in potatoes & continue cooking
till potatoes are tender and chicken is cooked.(pic 5)
5. Pour in coconut milk & season to taste with salt & sugar.(pic 6)
Note: Dish tastes better after leave for 6 hours.
